Day 7 – a week of soup.
I love anything Thai so decided to end the week with a Thai soup. I made this soup with shrimp because I also love seafood. You could make it with chicken as well. I also wanted to add some raw cashews to it at the end but mysteriously all the cashews I had in my pantry have vanished…..my kids swear they have no idea who ate them.
2 cups water
1 Can Coconut Milk
2 Cups Shredded Carrots
1 Cup Snap Peas
1/4 Red Pepper
2 Tbsp. Red Curry Powder
Fresh Cilantro (optional)
Combine water, coconut milk, carrots, curry powder and shrimp in a pot and bring to a boil.
Reduce heat to a simmer and add snap peas, and red pepper. Simmer until shrimp are cooked through (turn pink) Be careful to not overcook or they will get rubbery.
Sprinkle some fresh cilantro on the top, stir in and enjoy.
If you want to add some extra flavor you can also stir in 3 Tbsp. fresh lime juice.
